Asteri Balsamic Soy Roasted Garlic Mushrooms

Sometimes the best recipes are the ones that require very little effort but taste as though you’ve been hovering over the stove all afternoon.

These Asteri Balsamic Soy Roasted Garlic Mushrooms are exactly that.

Earthy mushrooms are tossed with Asteri Extra Virgin Olive Oil, rich Asteri Organic Dark Balsamic Vinegar, soy sauce, fresh garlic, thyme, and our Asteri Greek Salad Seasoning Blend, then roasted until beautifully browned, tender, and coated in a glossy, deeply savory balsamic glaze.

The soy brings the umami. The balsamic brings sweet-tart depth. The EVOO helps everything caramelize beautifully. And the Greek Salad Blend takes care of the seasoning without reaching for the salt shaker.

Twenty minutes in the oven. Very little fuss. An alarming amount of flavor.

Why the Asteri Dark Balsamic Works So Well

This is one of those recipes where the quality of the balsamic really matters.

Our Asteri Organic Dark Balsamic Vinegar is made in Spain from Pedro Ximénez grapes, with naturally rich notes of dark berries, fig, and jam. Roasting concentrates those flavors, creating a gorgeous sweet-and-savory glaze around the mushrooms.

Ingredients

Serves 4 as a side dish

  • 1 lb. (450 g) fresh mushrooms, cleaned and trimmed
  • 1 tablespoon Asteri Extra Virgin Olive Oil
  • 3 tablespoons Asteri Organic Dark Balsamic Vinegar
  • 2 tablespoons soy sauce or tamari
  • 3 cloves garlic, finely chopped
  • ½ teaspoon fresh thyme, chopped
  • 1–1½ teaspoons Asteri Greek Salad Seasoning Blend, or to taste
  • Fresh thyme for garnish, optional
  • A small finishing drizzle of Asteri EVOO, optional

Let's Make Them

1. Heat the Oven

Preheat the oven to 400°F / 200°C.

For the best browning, use a large baking sheet or roasting pan that gives the mushrooms enough room to spread out.

2. Make the Balsamic Marinade

In a large bowl, combine the Asteri EVOO, Asteri Organic Dark Balsamic Vinegar, soy sauce, garlic, thyme, and Greek Salad Seasoning Blend.

Give everything a good whisk.

3. Toss Those Mushrooms

Add the mushrooms and toss thoroughly until every mushroom is coated in that glossy balsamic mixture.

Don't be shy. They should look positively overdressed.

4. Roast

Arrange the mushrooms in a single layer on the baking sheet.

Roast for approximately 20–25 minutes, tossing them halfway through, until the mushrooms are tender, browned, and beginning to caramelize around the edges.

Cooking time may vary slightly depending on the size and variety of mushrooms.

5. Finish & Serve

Remove from the oven and spoon any of those glorious balsamic pan juices back over the mushrooms.

Finish with a little fresh thyme and, if you're feeling particularly Mediterranean, a light drizzle of Asteri Extra Virgin Olive Oil just before serving.

Asteri Tip

Don't crowd the pan.

Mushrooms release quite a bit of moisture as they cook. Give them room and they'll roast and caramelize. Pack them together too tightly and they'll steam.

Delicious either way—but we're after those gorgeous browned edges.

Make Them Your Own

These mushrooms are brilliant straight from the roasting pan, but they're also surprisingly versatile.

Serve them alongside roast chicken, steak, pork, or grilled fish. Spoon them over creamy polenta or mashed potatoes. Toss them into pasta. Pile them onto toasted sourdough with goat cheese or feta. Add them to a grain bowl. Or serve them warm with toothpicks as a very easy cocktail appetizer.

And if you happen to eat several directly from the baking sheet before dinner reaches the table?
