Garlic & Thyme Roasted Carrots
Roasting garden carrots in Asteri EVOO caramelizes their natural sugars for a rich, sweet side dish.
Ingredients:
- 1 lb fresh carrots, trimmed and scrubbed
- 2 tbsp extra-virgin olive oil (EVOO)
- 2 garlic cloves, minced
- 1/2 tsp salt and 1/4 tsp pepper
- 1 tbsp fresh thyme or rosemary leaves
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the carrots diagonally into 2-inch pieces (halve thicker carrots lengthwise so they roast evenly).
- Toss the carrots directly on the baking sheet with Asteri EVOO, minced garlic, salt, pepper, and fresh thyme.
- Roast for 20 to 25 minutes, stirring halfway through, until fork-tender and blistered at the edges.
