Garlic & Thyme Roasted Carrots w/ Asteri EVOO

Garlic & Thyme Roasted Carrots
Roasting garden carrots in Asteri EVOO caramelizes their natural sugars for a rich, sweet side dish. 
Ingredients:
  • 1 lb fresh carrots, trimmed and scrubbed
  • 2 tbsp extra-virgin olive oil (EVOO)
  • 2 garlic cloves, minced
  • 1/2 tsp salt and 1/4 tsp pepper
  • 1 tbsp fresh thyme or rosemary leaves
Instructions:
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the carrots diagonally into 2-inch pieces (halve thicker carrots lengthwise so they roast evenly).
  3. Toss the carrots directly on the baking sheet with Asteri EVOO, minced garlic, salt, pepper, and fresh thyme.
  4. Roast for 20 to 25 minutes, stirring halfway through, until fork-tender and blistered at the edges.
