Open-Faced Chicken Gyros with Tzatziki & Toasted Pita
Everything you love about a chicken gyro—without trying to keep half of it from escaping out the bottom of the pita.
These Open-Faced Deconstructed Chicken Gyros layer warm toasted pita with juicy, boldly seasoned chicken, cool homemade tzatziki, sweet cherry tomatoes, and crisp red onion. The chicken gets its Mediterranean flavor from Asteri Festival Chicken Blend, with a little extra cumin, garlic, and paprika added to create a rich, aromatic marinade.
It’s fresh, colorful, satisfying, and easy enough for a weeknight dinner but impressive enough to put in the middle of the table when friends are over.
And because everything is served open-faced, every bite gets a little of everything—which is really how a gyro should behave.
Why You'll Love This Recipe
Traditional gyros are wonderful, but this version takes a slightly different approach. Instead of stuffing everything into pita, we toast and slice the pita and use it as the base for the dish.
The result is somewhere between a gyro, a Mediterranean platter, and a very good excuse to use too much tzatziki.
The Festival Chicken Blend provides the foundation for the marinade, while cumin, paprika, fresh garlic, lemon, and extra virgin olive oil build even more flavor. Cool tzatziki balances the warm spices, and tomatoes and red onion keep everything bright and fresh.
Ingredients
For the Festival Chicken
-
1½ lbs (680 g) boneless, skinless chicken thighs or chicken breasts
-
2 tablespoons Asteri Extra Virgin Olive Oil
-
2 tablespoons Asteri Festival Chicken Blend
-
1 teaspoon ground cumin
-
1 teaspoon sweet paprika
-
2 cloves garlic, finely minced
-
1 tablespoon fresh lemon juice
-
½ teaspoon salt, or to taste
-
Freshly ground black pepper
For the Gyros
-
4 pita breads
-
Asteri Extra Virgin Olive Oil, for brushing
-
1 cup cherry tomatoes, halved
-
½ small red onion, very thinly sliced
-
1–1½ cups Asteri Easy Tzatziki (Click here for recipe)
-
Fresh parsley or dill, optional
-
Lemon wedges, for serving (optional)
Step 1: Marinate the Chicken
In a large bowl, combine the olive oil, Festival Chicken Blend, cumin, paprika, garlic, lemon juice, salt, and freshly ground black pepper.
Add the chicken and toss thoroughly so every piece is coated in the marinade.
Cover and refrigerate for at least 30 minutes. If you have a little extra time, let it marinate for up to 4 hours for even more flavor.
Step 2: Cook the Chicken
Heat a large skillet or grill over medium-high heat.
Add the marinated chicken in a single layer, working in batches if necessary so the pan isn't overcrowded.
Cook for approximately 7–10 minutes, turning occasionally, until the chicken is nicely browned around the edges and completely cooked through. The internal temperature should reach 165°F / 74°C.
Those slightly charred edges? Keep them. That's where the good stuff lives.
Step 3: Toast the Pita
Lightly brush the pita breads with extra virgin olive oil and sprinkle with our Asteri Greek Salad Blend (substitute garlic salt as an option).
Toast them in a dry skillet or grill pan for a minute or two on each side until warmed through and lightly crisp around the edges. You can also toast them briefly in the oven.
Cut each pita into wide strips or wedges.
You don't want pita chips here—the bread should still have enough softness to soak up the chicken juices and tzatziki.
Step 4: Build Your Open-Faced Gyros
Arrange the warm toasted pita pieces on individual plates or a large serving platter.
Spoon the hot Festival Chicken over the pita, then scatter the halved cherry tomatoes and thinly sliced red onions over the top.
Add generous spoonfuls of Asteri Easy Tzatziki over and around the chicken.
Finish with fresh parsley or dill if desired, a squeeze of fresh lemon, and a final drizzle of good extra virgin olive oil.
Make It A Platter
Serving a crowd? Skip the individual plates and turn the entire recipe into a large Mediterranean-style sharing platter.
Place the chicken in the center, surround it with toasted pita, cherry tomatoes, red onion, lemon wedges, and a bowl of tzatziki, and let everyone build their own bites.
It's casual, colorful, and particularly useful when nobody agrees on the appropriate amount of tzatziki.
For the record, the appropriate amount is more.
Asteri Kitchen Tip
For a more polished presentation, spread a generous swoosh of tzatziki across each plate first. Arrange the toasted pita over it, pile the Festival Chicken slightly off-center, and finish with the tomatoes and red onion.
Add a drizzle of EVOO and a little fresh dill or parsley.
Deconstructed, yes. Disorganized, absolutely not.
What to Serve with Chicken Gyros
These open-faced gyros are substantial enough to serve on their own, but they're also terrific alongside a simple Greek salad, roasted lemon potatoes, grilled vegetables, feta cheese or a bowl of marinated olives.
For a full Asteri Mediterranean dinner, serve them with our Greek Lemon Garlic Potatoes and a crisp salad dressed simply with Asteri Extra Virgin Olive Oil, lemon, and a sprinkle of your favorite Mediterranean seasoning.
