Smoky Roasted Eggplant Dip with Tahini & Greek Olive Oil

Smoky Roasted Eggplant Dip with Tahini & Greek Olive Oil

Some of the best Mediterranean dishes start with the simplest ingredients. A couple of eggplants, a spoonful of tahini, a squeeze of lemon, and a little excellent olive oil. Nothing complicated. Nothing unnecessary. Just ridiculously good flavor.

This Smoky Roasted or Grilled Eggplant Dip with Tahini is creamy, gently smoky, nutty, and bright with fresh lemon and garlic. Inspired by the classic Middle Eastern favorite baba ganoush, it's the sort of appetizer that disappears remarkably quickly when warm pita bread is involved.

Perfect for a mezze platter, casual entertaining, or a quiet afternoon when dinner can wait but the bread absolutely cannot.

Ingredients

  • 2 medium eggplants

  • 2 tablespoons tahini

  • 2 tablespoons freshly squeezed lemon juice

  • 1 garlic clove, minced

  • 1 tablespoon Asteri Greek Extra Virgin Olive Oil, plus extra for drizzling

  • Pinch of salt, or to taste

  • Optional garnish: paprika or freshly chopped parsley

Instructions

1. Roast or Grill the eggplants

Preheat your oven to 425°F (220°C). Pierce the eggplants several times with a fork and place them on a parchment-lined baking sheet.

Roast for approximately 35–45 minutes, turning occasionally, until the skins are wrinkled and the flesh is completely soft.

Optional: Grill the Eggplants for Extra Smoky Flavor

Preheat your grill to medium-high heat. Pierce the eggplants several times with a fork, then place them directly on the grill grates.

Grill for 25–35 minutes, turning every 5–7 minutes, until the skins are charred and the flesh is completely soft and collapsing.

Allow to cool slightly, then slice open and scoop out the tender flesh, discarding the charred skins. Drain any excess liquid before mashing.

Continue with Step 3 of the recipe.

Asteri Kitchen Tip: Grilling adds a wonderful smoky depth that pairs beautifully with tahini, lemon, and Greek extra virgin olive oil.

2. Scoop and mash

Allow the eggplants to cool slightly. Slice them open and scoop the soft flesh into a bowl, discarding the skins.

For a thicker dip, let any excess liquid drain away. Mash the flesh with a fork until creamy but still slightly textured.

3. Mix in the Mediterranean goodness

Add the tahini, lemon juice, minced garlic, olive oil, and salt.

Stir until everything is beautifully combined. Taste and adjust the lemon or salt as needed.

4. Chill

Cover and refrigerate for at least 30 minutes or overnight to allow the flavors to mingle.

5. Finish and serve

Spoon the dip into a shallow serving bowl. Create a little swirl with the back of a spoon and finish with a generous drizzle of Asteri Greek Extra Virgin Olive Oil.

Sprinkle with paprika or chopped fresh parsley, if desired.

Serve with warm pita, toasted sourdough, crunchy vegetables, or as part of a Mediterranean mezze spread.

A Little Asteri Kitchen Tip

For a more pronounced smoky flavor, char the eggplant skins over a gas flame or grill before finishing the cooking in the oven.

And don't underestimate the finishing drizzle of olive oil. A beautifully balanced Greek extra virgin olive oil adds richness and a peppery finish that brings the whole dish together.

Make It a Mediterranean Spread

Pair this roasted eggplant dip with Greek olives, feta, fresh tomatoes, cucumber, warm pita, and a bowl of tzatziki.

Add a chilled glass of something lovely, gather a few friends, and suddenly a simple appetizer becomes an occasion.

Good food. Good company. Excellent olive oil.

That's the Mediterranean way.

Bold Not Basic. Even when it's just a dip.
